"We've made it with everyone in mind because it's all vegetables, with cabbage, potato, carrot, courgette, cheese, lettuce, puff pastry and yoghurt sauce", is how Gabriel Trakiev, an employee of the restaurant Las Tablinas, located on Avenida Miguel Hernández, in Las Lagunas, in the Sector 31 neighbourhood, describes the 'Delicia campera' (Country Delight). The restaurant is part of the II Las Lagunas Tapas Route and the tapa is enjoying a good response from customers, as Cristina Jiménez and Diego Jiménez commented, as they decided to try it last Saturday: "It's very good, it's like a cod pancake, but with vegetables, on a puff pastry shell".
This tapa is one of the 11 proposals that make up this initiative promoted by the Mijas Town Hall Tourism Department in collaboration with the Mijas Federation of Associations, which takes place on Tuesdays, Thursdays and Saturdays from 13:00 to 15:30 and from 19:30 to 23:30. "The idea is to encourage local consumption, and to give our establishments a chance, we know that the seasonal nature of tourism affects this and, in particular, Las Lagunas is no stranger to this circumstance. We would also like to thank all the people who are participating and visiting the establishments, as this is a very interesting initiative, which we will be reinforcing in the coming years because it is very worthwhile", said the Councillor for Economic Development of the Mijas Town Hall, Juan Carlos Maldonado (PMP), who also thanked the collaboration of the groups "so that it can be definitively established and form part of the offer of our catering businesses, which make Mijas a gastronomic and tourist reference", and added that it also opens up a space for the promotion of local commerce "in such a globalised market".
For these reasons, this second edition of the 'Ruta de la Tapa' in Las Lagunas is to the liking of both businesses and people who decide to complete the route. "The truth is that the date is perfect, it coincides with the drop in summer tourism, it helps us a lot, we have seen more movement in the neighbourhood and I see that people are more enthusiastic", said Trakiev.
For her part, Cristina Jiménez stated that several establishments have already been visited since this Tapa Route began on October 14th and she highlighted that "Gabi's retinto chocolates, which are very good, and also the Russian salad with smoked fish at El Abuelo, which is spectacular".
