Tasting sessions for the next Las Lagunas Tapas Route get underway

  • Culinary experts visit all the participating establishments to taste their proposals and make suggestions

The ham shop Corte de Autor was the first business to present its tapa to the tasting on Monday 30th and passed the ‘test’ with distinction

The ham shop Corte de Autor is participating for the first time in the Las Lagunas Tapas Route and it does so with a ham tartare. It was in fact the first establishment to start the tasting sessions, on Monday 30th, with the culinary experts who will be in charge of tasting the proposals in this third edition of the route. The result was, they assure, outstanding. 

The tapa presented by Corte de Autor, which combines tradition and innovation in a single bite, "made with dice of Iberian ham, a little secret and salmorejo", as the owner of the ham shop, Fran Ortiz, explained, captivated the tasters. "The tapa is very good and the presentation is appropriate", said one of the tasters, María Ángeles Núñez, after the tasting.

"This year we have the pleasure of having some magnificent professionals from the Peña Los Artistas Culinarios. They are going to go to the shops, taste the tapas, and if they see that they need to make any kind of suggestion they will let us know and we will also inform the shops", explained the president of the Federation of Associations (FA) of Mijas, Charo Cortés, who attended the start of the tastings together with the councillor for Commerce of the Mijas Town Hall, Juan Carlos Maldonado (PMP).

A boost to local commerce 

"With the tapas route we are making a neighbourhood, we are also making Las Lagunas a gastronomic destination, working with gastronomy and commerce, promoting its menu and getting residents involved with local commerce", said the councillor. 

In total, this year the III Las Lagunas Tapa Route, which will be officially launched on October 4th at Bar Gaby (last year's winner), will have ten participating establishments. During these days the tasters will be trying their gastronomic proposals. The aim is "to give advice to try to improve the tapas and help businesses. We are not going to criticise, but to make suggestions for improvement, what we are trying to do is give our opinion in order to improve as much as possible, and then the establishment will decide whether or not to incorporate our suggestions", explained Núñez.

A tapa that combines tradition and innovation in a single bite

The first tapa tasted, the Carta de Autor ham tartare, according to the culinary experts, meets all the requirements that are valued: good flavour, good presentation and plating "and we also look for them to make an effort to present something innovative, that the tapa has something different, that it has something that makes it special", added Núñez. In the case of the Carta de Autor ham tartare, what makes it special is that "little secret" that only the chef knows, but that the customers notice when they taste it.

Both the councillor for Commerce and the president of the Mijas FA appreciated the importance of this type of initiative for local businesses, as well as the date chosen. "The aim is to balance out the low season or the slowdown that these local businesses suffer between summer and Christmas, thereby boosting the economic and gastronomic activity in the area", said Juan Carlos Maldonado.
